Top Chef's Ed: What's the Point of Last Chance Kitchen?

Edward Lee | Photo Credits: Virginia Sherwood/Bravo

Edward Lee would like to point out that he technically was in the final four of Top Chef — for a few hours. But then Beverly, having won Last Chance Kitchen, returned to the game and out-cooked him for a spot in the actual final four. "It is what it is. I don't hold a grudge. She won fair and square," Ed tells TVGuide.com. "I shouldn't have used the smoked oysters, so it was all on me." Still, the Louisville-based chef is none too pleased with the second-chance secret competition for eliminated cheftestants. Find out why.

Top Chef's Grayson: I wasn't excited about Last Chance Kitchen

Did you think you were going to be eliminated?
    Ed
: Yeah, a lot of times I think you can feel it when your dish isn't up to par. ... It was a tough elimination, especially because it was me and Lindsay. She's such a great chef. She was, as you saw, in major tears mode. I was feeling bad for her because she was really breaking down. It was a fair assessment.

Why did you buy smoked oysters? You know one of the show's biggest sins is buying pre-packaged food.
    Ed:
Who knows? [Laughs] We made a smoked oyster soup before — obviously not with pork. It was a completely different dish. I never even thought that I wouldn't find fresh oysters. When it happened, I was so thrown off my game. I saw these smoked oysters and was like, "You know, we've used them before..." But the minute I started cooking with them, I was like, "This is not a good idea." I should've just not put the sauce on the plate. But if it didn't have a sauce at all, it might be too simple. It wasn't a terrible sauce, but it just didn't go with the dish. Everything stems from one small decision and it continues to grow and becomes a thing. But hindsight's 20/20.

How tough was it to lose in front of your mentor?
    Ed:
Frankie [Crispo]'s OK. I've known Frankie for so long that he's less of a mentor and more of a friend. He was sympathetic.

Had you won the Quickfire, you said you would've chosen the car over the free pass into the final. Would you really have or did you say that because Sarah chose the free pass?
    Ed:
You'd have to be in the moment, but I think I would've chosen the car. We're here to compete. Who knows? In the heat of the moment, I might've broken down and picked the free pass, but I'd like to think I'd have taken the car.

Do you think that's a fair twist? I feel like you should all cook your way into the final.
    Ed:
That, I didn't really mind. But I didn't understand the concept of Last Chance Kitchen to be completely honest. I understand why it's there, but to me it seems like, once you're out, you're out. What's the point of a second chance? I don't get it.

And they weren't competing under the same challenges as you guys were.
    Ed:
Yeah. I mean, obviously I don't like it because I was the one that was knocked out! [Laughs] Beverly loves the concept of Last Chance Kitchen! But if we're in a basketball tournament, you can't lose and say, "Let me play another loser and get back in." That's all water under the bridge now.

Top Chef's Chris Jones: I had a bad feeling about everything

You were the only eliminated chef who didn't get to participate in Last Chance Kitchen.
    Ed:
Well, that's the whole thing. And it's interesting because had we known there was Last Chance Kitchen, there might've been a way to strategize. I don't think anyone would, but you could think, "Hey, maybe I'll purposely get eliminated because I know I'll have a chance to get back in." It will be interesting in upcoming seasons if they continue [Last Chance Kitchen]. Because the Last Chance Kitchen challenges are — I wouldn't say easier — but they're much more simple than the elimination challenges. For example, I think Nyesha had an incredible run and it was very possible for her to come back except for the fact that she got knocked out so early, so for her to win, like, eight or nine challenges in a row is tough. And at a certain point she probably got exhausted. So you could strategize and maybe go out closer to the end. Beverly only had to beat three people to get back in.

Why were you convinced it was Beverly and not Grayson coming back?
    Ed:
As much as this is a cooking competition, it's also a psychological one. Once you're psyched-out, it's hard to come back. Beverly has shown that she has the resilience and toughness. I think Grayson, just from her personality, checked out mentally when she got eliminated. As chefs, I think they're both equally strong, but Beverly was coming off some confidence [with wins in Last Chance Kitchen] and Grayson just got eliminated so close to the final four that it might've been tough mentally to get back in.

You were one of the few people, the majority of which were guys, who didn't have problems with Beverly. Why was she such a sore spot for the girls?
    Ed:
I think a lot of it is that her ways are very unorthodox. It's tough working next to her because she does things and says things and says things. I think guys just pay less attention to that. We're probably less in tune to what's going on around us. Women might be more sensitive. That's a generalization, but I think it's true in this case. The other thing is sometimes she's portrayed as a victim and sometimes she's not — one scene she's crying and next she's putting an elbow into your rib to get an ingredient. There were times where she was very headstrong and it rubbed the girls the wrong way. I think guys are also naturally more competitive. If someone checks me or bumps into me or whatever, I may get mad at the moment, but I wouldn't hold a grudge. I won't sit and stew about it. It would just motivate me to concentrate and beat them. At the end of the day, we all respect each other.

Top Chef's Beverly: I stood out like a sore thumb

I loved the scene of you forcing yourself to cry.
    Ed:
[Laughs] I was close to crying [this episode]. I didn't cry at all on the show. It was really shocking to me to see everyone cry when their mentors came out. It's not to say I didn't want to cry. But seeing the emotional weight it carried for the other chefs was like, "Wow! These guys really want it." It's hard to explain. I'm also emotional, but I guess I show it less. It was really enlightening to see how much the other chefs were so deeply invested.

Why did you wear a suit jacket to bed?
    Ed:
[Laughs] It was a running joke. Every day we'd wake up and say, "It's all about business." And I brought this suit and I never really had an opportunity to wear it. So I was like, "If we're going to be about business, I'm going to sleep in this suit."

Was it comfortable sleeping in it?
    Ed:
You know, I don't know. We're so exhausted that some moments I fell asleep sitting in a chair. You try to get as much sleep as you can since you never know what's coming next.

What are you up to now?
    Ed:
Just plugging away. The restaurant's busier than it's ever been. I'm working on a cookbook, which will hopefully be released in 2013. Tons of opportunities have come from this and I'm just trying to be wise about them and not jump at the first offer.

Paul and Beverly are my predictions of the final 2. I think if Sarah hadn't won immunity she would of gone home, she's been on the bottom a lot.

        Paul wins

sorry, the judges are mostly white...Lindsay is gonna win

The sad thing is that Sarah's so ignorant on the inside yet she never realizes how bad she can be. If she does manage to even be the runner-up, it'll still be enough steam to make her mouth run. She's at the point where she's basically just Internet trolling in the kitchen.

I was imagining his voice sounding like Thurston Howell the III when he talks. The way he moves his mouth reminds me of Mr. Howell.

I guess its not right that the last person didnt get a last chance. but as he and everyone said his dish was not good. Bev was in her own world granted but the women were just bioches. the fianalist (heavy set one) is awfull, nasty and rude

You got that right!--Beverly was not part of this season's "Mean Girl's Club." And that's why we like her.

Sarah drives me up the wall. She is so annoying.

You could tell that all of them were not happy about the twist. I think Sarah was gutless for taken the pass into the Final Four, but I know why she did it, because it would have been her going home and not Ed, and she didn't want to be the first one to lose to the returning Bev, but she will be the next one to lose to her this coming week. I'm pulling for Paul or Bev to win the whole thing. Ed doesn't use those smoked oysters Lindsey would have been gone, but he had a concept in his head, and he was his own worst enemy on that dish.

How could you root for Bev when she was the reason Ed lost. I hope she goes
        first.
      • Jeffrey H 3 months ago
Jerseygirl, my first choice would be Paul to win, but if I had to choose between the other 3, I am taking Bev over Lindsey and for sure Sarah. I would argue that it was Sarah who sent Ed home, cause had she chose the car instead of the easy way out, who knows, cause Ed said himself when she did that, it just shows her lack of confidence in herself.

Worst season of Top Chef ever... Im still #$%$ at how Nyesha got shafted twice, once on Top Chef and once on Last Chance. The show has jumped the shark for me :(The Next Iron Chef totally blew this out of the water this season...

I love Top Chef, but what I don't like is that every season there seems to be a scapegoat whom everyone gangs up on. This season it's Beverly. I don't remember the female chefs name who was the worst, a good example of a real Bully, but I was glad she was eliminated
a few episodes ago. She was heavy set. Beverly tries to blend in but there is always something negative going on from the others. I hope she wins, just to put them all in their places. Sorry to see Grayson go though, she was great.

I like Beverly, I have liked her from the beginning. She is TOTALLY weird, but one thing she is not is a catty #$%$ and I can't say that for any of the other girls there. Yeah, she was headstrong and probably hard to get along with, but you could see that their dislike of her was as much Girl Politics as it was anything else. She was never mean to them, but that didn't stop them from indulging themselves and ganging up on her because it was falsely allaying their insecurities. The last straw for me was Lindsey trying to throw her under the bus during Restaurant Wars, it was OBVIOUS she was trying to construct a "she screwed up cooking my dish" plotline, and I was really happy that Grayson stuck up for Bev. I was really dismayed by the behavior of a lot of the female chefs, it was like watching bullies straight out of junior high and they are ALL old enough and smart enough to know better.

Last Chance was #$%$ those eliminated were at the time worse than the other chefs. You work you butts off to get to a final four or whatever, and then someone who you beat fair and square and was eliminated is allowed back. Its not remotely fair to the game of competition but the others who are playing the game fairly. Beverly lost fair and square weeks ago, these chefs worked to get where they are. And also to get a "buy" from the competition is #$%$ too. It's like the #$%$ NFL......Teams kill each other and get to an undefeated year or one loss only to lose to a 8-7 Wild-card team. Please. The top teams play each other in the final game because they worked to be at the top. If you want a toilet bowl, then have one, like TOP CHEF should have a toilet bowl then. You don't get a second chance in life because you lose. You learn from it.

I thought that Heather was out of line and a bully with Beverly, but to be honest, I think Lindsay is just being a strong chef. I saw her bite her tongue many a time with Bev. As for Sarah, she is definitely more #$%$ toward Bev, but that does not mean that she is a slob or a bully. In fact, lack of social skills due to home schooling aside, Bev was very passive-aggressive and at times DID #$%$ things but didn't own up to them. For example, cooking the halibut in the challenge after she threw Lindsay's dish under the bus while putting enough care in hers to win. Or when on Last Chance Kitchen she tried to nastily psych her friend, Grayson, out by taunting her with "Why did you get eliminated" as the only thing she she said to her. Even Grayson said on "Watch What Happens" that Beverly is a sweet person but NO ONE LIKES COMPETING AGAINST HER. She isn't considerate in the kitchen, hogs burners in multiple episodes, and takes things from other chefs without asking.A good leader, top chef, top business owner has to be assertive and these girls are used to being the boss. For females you have to be strong in the kitchen to effectively lead a brigade and open a restaurant. Ever seen Gordon Ramsey's style? Didn't see anything like that happening. However, this doesn't change the fact that Bev is very talented and I can see why she is in the final four. Reality TV doesn't show every moment, folks. It only shows 1 polarizing hour of what could be 12 to 84 hours. And for the record, I do not know any of the chefs but I have seen every episode of the show since Season 3. I say that Bev could use this as a growing experience to understand why all of these people were #$%$ off, improve her awareness in the kitchen so her staff doesn't suffer the same problems, and move on. Buck it up. As to Bev's history with domestic violence, I was very saddened to hear this but was not surprised to see the Bully/Victim relationship happen with Heather because Bev is therefore susceptible to fall into the role instead of standing up for herself. I suggest that the former get counseling for her past trauma and learn how to be more assertive and the later to go to anger management counseling. As for the final four, congratulations to all of you, you deserve to be there but I was also sad to see Ed go.

I am going to give this concept a shot at the next Poker tournament I play in. If I get knocked out I will throw in the Last Chance Poker Card!

I didn't care much for the Last Chance Kitchen. I know in the past they've brought eliminated chefs back to be sous chefs for the final four, and that was a cool idea. But I think if they were going to bring an eliminated chef back into the competition, it would have been way more fair to bring back the last one that was eliminated, in this case Grayson. And I didn't think much of the guaranteed spot in the final 4. Didn't they say "no more immunity" a few weeks ago? I think by this point in the competition, the chefs should have to make it on their own merits. Honestly, I think it should be that way for the whole competition, but especially toward the end. Overall this has been a pretty disappointing season. Not sure I'll watch next season.

Ed was a victim of the fact that Top Chef has been on for several seasons and is losing viewers. So to try to keep people watching, they are resorting to turning it into more and more of a game show. Expect even more weird surprises and twists in the next season like Last Chance Kitchen and free spots in the finals as they try to keep viewer interested in the show.

Bev may be good at cooking, but I don't think she could ever run a kitchen. She seems to have issues multi-tasking.

No way that Paul doesn't win this thing. Best chef, hands down.
